Mostly a success

Though the paneer wasn't perfect, I'm calling it mostly a success. It was too crumbly around the edges, but that was due to the tofu press I was using and the fact that I should've drained it more. But the bulk of it cut smoothly, and it held its shape in tonight's saag.

I ordered a proper mold from Amazon to use the next time I make paneer. Because I will. The result was just good enough for me to want more, and the process wasn't that bad once I figured it out. Plus, for the price of a gallon of milk, I have enough protein for an entire meal. It makes for a very nice alternative to meat or tofu.
