Raw beet salad with carrot, quinoa, and spinach

A couple months ago, I bought a spiralizer, but I didn't get around to using it for the first time until tonight. I made this raw beet salad with carrot, quinoa, and spinach for dinner, and it turned out pretty good. Plus, the spiral beet shreds were sooooooo pretty. I didn't put the almonds in (I couldn't find them in my pantry), but I didn't miss them. There was enough crunch from the edamame (which was also a first for me, I discovered that I quite like edamame). I doubled it for four entree servings, but honestly, that was too much. Very filling, and we have some left over.

I bought zucchini this past weekend, so now I have to do some zoodles like I've been seeing everywhere for dinner later this week. The spiralizer was so easy. I might get a little silly about it for a while.
