Another great thing about today? I recently got the Thug Kitchen cookbook on the recommendation of a friend, and I've tried a couple recipes from it this week. Tonight was a roasted chickpea and broccoli burrito that was a huge hit with everyone. Even Alex. He ate two and wished there was more. Friday, I'm trying the mushroom and spinach lasagna. Alicia wants Friday to be tomorrow, lol.
But seriously, I'm more than a little in love with this cookbook. It's going to be a lot easier to cut back on meat with recipes like these.
